Herman cake

I have now made a Herman cake twice with sourdough starters given to me by friends and I'd like to make it from scratch.

Does anyone have a recipe for the sourdough starter used with Herman cakes, please?

(In case you haven't heard of it, a Herman cake is (I think) also known as a Friendship cake, and there's a "feeding" palaver, a bit like with a ginger-beer plant (not that I have firsthand experience of one of those) and you are meant to end up with four times as much starter as you need and to give three portions away.)

I have various sourdough recipes in bread cookery books, but it is specifically the recipe for the herman cake starter that I'm looking for.

See the link below -scroll down to the bottom and it gives you the recipe for the starter mix. I have a Herman bubbling away in the cupboard right now!

I loved my Herman cake, but the mixture went bitter and unusable (after several weeks and it made good bread too). Off to look at recipe.

My pleasure. I made two cakes ( gave two portions away but kept the rest). One was the apple, raisin and cinnamon one that came with the instructions, and the other was with chocolate chips and fudge pieces. Both have gone down well so hope you have lots of happy cake eaters too :)

Can someone advise what size of cake tin I would need?

Width and height would be great!

RadioSilence · 02/06/2012 17:14

It needs to be BIG. Mine was 20cm x 30cm and about 5cm tall

Eep!

Shopping trip required then!

But I need a big one to make a Dundee cake!

I put all sorts into mine, the last one had dried mango, dessicated coconut, cherries, apple, walnuts and dates in it and it was soooo nice xx

Very glad to read that there are non-cinnamon recipies out there. I accepted a Herman on Tues, not realising the recipe (later) needed cinnamon - I'm allergic!

I love the idea of mango, coconut and cherry.
