hot weather dinners.....

I am stuck in a rut with dinners niw as i canonly think of hearty dishes like chilli and pasta or lasagne etc etc. I am lookin for some inspiration on hot weather food but minimal fish is eaten in this house and no risottos (dh hates them)

lasagne, enchiladas, that sort of thing, with salad on the side and garlic bread

chicken salad wraps/fajitas

most of my summery dinners involve roasting a chicken and leaving the rest to chance!

Cold roast chicken with salad and couscous

Olives and ham and nice bread and salad

If you like salad then you will be fine!

er, not much help, but if its any consolation, we have been eating either

quiche/pizza/chicken with oven chips and salad
or
crackers and cheeses and ham and fruit

for a week now

griddled meat with steamed veg and steamed spuds. Or with a salad.

fajitas are great in this weather.

pasta with peas and bacon and mint (JO, MOF)

Lighter pasta dishes eg with creme fraiche, dill, parmesan and green veg of choice (eg spinach ) or with fresh tomatoes a splash of cream and lots of basil

Quiches and tarts - made with veg and cheese of choice. Served warm with salady veg and new potatoes

Fish - warm or cold. Salmon is much better cold IMO. Serve with new potatoes and salad, and perhaps a yoghurty dill sauce or soy and sugar snap peas

Chicken skewers - marinade in your choice of flavourings, with crusty bread and raw veg/salad

We had the slow-cooked pork in coke yesterday, in pita bread with a nice side salad. Delicious!

Spicy foods are great in the heat: dahl and rice, green curry, chorizo and chickpea stew, fajitas etc.

Also BBQed / grilled / griddled meat: you want a bit of a char on it. Think
Greek or Lebanese.

We have been having lots of little tapas things, hummous and bread etc. Marks and Spencer's have a great range and they are on offer at the moment.

We had mushroom stroganoff with crusty bread today. Yesterday was BBQ chicken & salad.

Our favourite hot weather dinners are breads/salad/meat/cheese picnics. The kids get a cooked lunch at school so i don't think they need another cooked meal in the evening.

Excellent thread, I struggle with summer meals myself, I'm much better at winter food, big hearty stews etc!

I really wish DP liked cous cous :(
