we cheat and buy pouches/tubs of sauce from the supermarket - usually pepper or diane sauce

I would definately cheat you can get fresh sauces, or packets that you just add milk to. A blue cheese sauce is always nice with steak

I deglaze the pan of the meat juices with red wine, then add garlic, fresh rosemary, thyme and a splash of stock. Makes a nice red wine jus for thinner cuts of steak. Gordon Ramsay does a a great recipe for shallot and red wine sauce, too - google it.

Diane sauce is easy peasy for something a bit richer and old fashioned

Nigella has a good recipe for a creamy mushroom and herb sauce for steak. Another googler.

Chimichurri is very easy to make and so good with steak. More summery than a sauce, too.

eggwhite can I ask what do you do with the steak while you are making the sauce? I usually grill steak but if I did it in a pan what do I do to keep it hot while deglazing and making sauce?

Also I like to have steak with buttery mash (so no sauce required as it's so creamy already and you get all the flavours).

Also new pots with melted butter and some horseradish on the side yum Smile
