Potato Salad recipe please!

Please share your favourite, but not too fancy, potato salad. Im making a large bowl of it for a BBQ on Sunday. Thanks.

OK, I have no idea about quantities, tend to make it up as I go along, but I use:

Chopped Boiled potatoes
Chopped Hard boiled eggs
Spring Onions
(Optional chopped pickles - might be a German thing? Some love 'em, some hate 'em!)

For the dressing I do about 50/50 mayonnaise and salad cream. I hate salad cream but find it works really well here.

Bit of salt and pepper

50/50 mayo and creme fraiche works really well. It's far less clarty then.

I made a good one from triple D recently which I'll look up if you like.
My basic one is new potatoes and chopped spring onions with a dressing made with greek yog, mayo and cider vinegar.
That's a good dressing for coleslaw too, but you can only really have it on one or the other at the same meal!

I don't put in eggs, but I chop up spring onions or fresh chives, and mix salad cream with the mayo for a bit of bite.

It's nice, and much lighter made with a mustardy vinaigrette and dressed whilst still warm too.

Cooled boiled new potatoes, halved
Spring onions, finely sliced
Chives, chopped
Salt and pepper to taste
50/50 salad cream and Mayo, just enough to coat everything, don't like it swimming in dressing!
No ideas about quantity as I always cook by eye! HTH

Netto, what would you use for coleslaw then, if you use that mix for potato salad?

Make a dressing with the following:

2tbls cider vinegar
5tbls extra virgin olive oil
4 finely chopped cornichons
tsp capers, finely chopped
1 shallot, finely chopped
½-¾ tsp sugar
tbls finely chopped mint
seasoning to taste

Cook 1kg peeled new potatoes, cut into 2cm ish dice. Drain, and pour the dressing over while they're still hot. Very tasty. Even better made a few hours before, but serve at room temp/just warm.

german version

  • boil waxy potatoes (charlotte work well), peel and cut into half centimeter slices
  • cube an onion very finely then put in a pan with the liquid of pickled gherkins and bring to the boil. then pour over the potatoes.
  • cut an eating apple into small pieces and add to the potatoes
  • cut a few gherkins into same size as apples
  • salt / pepper
  • add mayo, about half a jar for 1kg potatoes
mix well and leave in the fridge for a few hours for the flavours to come through.

Actually, I've just realised that when I did the triple D potato salad, I did a mayo based coleslaw from there too!
It was just for the two of us though, I'd avoid similar things if you have guests.
I love the sound of that Frank, and will give it a go soon.

I do:
a couple of pounds of new potatoes
4 Spring onions, sliced up
4 tablespoons of olive oil
1 ditto cider vinegar
Juice of 1 lemon
salt and pepper

Boil potatoes, slice while still warm. Pour the dressing over it and turn a few times.

Dozens - have you pinched my recipe? That is the perfect recipe (even down to the specifics of the potatoes!)

It is also nice with whole baby boiled potatoes, thinly sliced red onion and a vinegarette dressing.

I can't stand creamy/mayo based potato salads.

On Sunday I will be using Jersey Royals as they are in season but any waxy potato will work.
I mix with olive oil, chopped spring onions, parsley, course mustard, salt & pepper.

Nice and fresh tasting. And doesn't go all gunky if left out for a couple of hours.

Boil some waxy new potatoes, charlottes or Jersey
While still warm mix with lots of chopped spring onions, cooked diced smoked bacon, black pepper and dress with mayo mixed with salad cream. The warmth of the potatoes helps the dressing and flavour to sink into the potatoes.

I usually mix mayo with yoghurt. I like the olive 'fake mayo' in a jar (I forget the make but it is definately not the one in the squirty bottle). Real mayo is too rich for me.

I ahbe three favourites.

Old fashioned English - Waxy new potatoes with a red wine vinagerette with lots of crushed garlic and chopped, fresh mint. Divine with lamb, steak or chicken.

Scandi style - floury potatoes in their skins and cut in halves or quarts. Once they're cooked but cold, mix with half soured cream half plain yog, diced red onion, chives and fresh dill. Very good with steak or chicken.

Amercan-style - desiree or other red potatoes, mixed while still warm but nothot with half soured cream half mayo (garlic mayo is good), a little bit of American mustard, mashed up hard boiled eggs, diced gherkin orther sweet green pickles, diced softened onion, - good with stronger flavours, and sweet/sticky bbq marinated meat.

Dont know if it's technically a Potato Salad but I ate the following (Starbucks) today:
*Mixed Leaves
*Cucumber
*Selection of peas
*Chickpeas
*Peeled potato wedges
*Tuna
*Minted dressing

Was delicious! Grin
