Blue cheese sauce

Anyone got a good recipe for it? I'm really craving chicken wrapped in bacon with a nice stilton sauce but we can't afford to eat out at my favourite pub that does it :(

Chunk of Stilton, blob of Philly, heat, done. Not the best way but certainly the quickest and easiest!

I just make a normal white sauce and crumble bucket loads of stilton in it.

I do cream and blue cheese, stir over a very low heat to melt.
I love blue cheese, the stinkier the better.

Don't worry about the infusing bollocks at the start though - just pop milk, butter, flour in saucepan and go from there.

Add cheese when it's thickened.

Double cream.
I have been known to make this and then just eat it from the pan with a spoon.
