Too hot for veggie sausage hotpot. What shall we have instead?

I see you helped with a similar question yesterday. I meal-planned last Thursday when it was cold and wet. I planned that tomorrow I will make veggie sausage, baked bean and potato hotpot, but now it is too hot for that and I am lacking inspiration for alternatives. The sausages will keep for a while so we don't have to use those, but we haven't got a lot else in the house as we do the weekly shop on Fridays. I could possibly go to Aldi and buy a couple of things though.
The criteria: vegetarian, fairly quick and not too complicated, suitable for 13mo to eat (she eats almost everything but only has 4 teeth), not pasta as we are having that today, possibly something that can be reheated for DH when he gets in later from his hobby but he can do himself something if necessary.

Cook the sausages and have them cold with some salady bits? Could do a potato salad even.

Sorry but vegi sausages r not very nice cold :( could u not chop them into bite size pieces and make into vegi kebabs with haloumi tomatoes peppers etc then grill them and serve with a nice salad and a tabouleh (sp)/ mixed bean salad/ potato salad/ home made coleslaw medley ? :)

The Linda mcartney ones were awful cold lol therer was this liquid (fat maybe ) that collected in the middle :)

If you've got spuds already you could get some eggs and an onion and make a kind of fritata/spanish omlette thingy. Add any veg bits you have and a little cheese if you have it. It's nice to eat warm and even nicer cold.

Oh yes, I see where you are coming from! I think the Linda McCartney ones are vile anyway, so I can imagine they are even worse cold. I usually have the Quorn ones which are fine cold.

Spanish omlette sounds lovely though, do that!
