Nigella's minestrone from How To Eat.

I had a gorgeous mushroom and walnut soup in Germany but no idea how to make it :(

1 Onion chopped, ¾ tsp ground coriander, ¾ tsp ground cumin, ¾ tsp ground turmeric, 350g Red lentils washed, 2 pints stock, 500g chopped tomatoes, 20g fresh coriander

Cook onion in olive oil for 5 Minutes add spices and cook for a futher 5 minutes. Add lentils and stock and bring to the boil and simmer for 20 minutes. Add creamed tomatoes and simmer for a further 10 minutes. Puree with coriander and season. To serve saute chopped fresh green chilli and sprinkle over soup with chopped coriander.

Any butternut squash soup recipes

Gazpacho is the only soup you can eat in this weather coz it's served cold! Mind you, I think vichysois (sp?) is too.

Haven't tried butternut squash soup before...I made sweet potato and chorizo yesterday...really recommend it!

Sorry I don't know how to link but there was a brilliant soup thread in October 2011 that I have bookmarked and used so many times since. It taught me how to make soup!
