What can I do with keft-over sponge mix?

DD was very keen on baking this morning, so we made double quantities of sponge batter. We had time to bake half of it before going out (lack of tins) hlf is waiting in the fridge. What can I do with it? (Apart obviously from baking another small sponge)

Ds loves sponge baked on top of stewed apple (I think it's called Eve's pudding) I sprinkle a little bit of cinnamon on apple put in base of dish and bake in oven. Serve with custard

A pineapple upside down cake? You just need golden syrup and some tinned pineapple, eat it with custard.
