Roast potatoes, does this sound ok?

Parboil them, then into a roasting tin mixed with olive oil, garlic, s&p and a bit of parsley? Or some other herb? Does that sound nice?

Parsley wont 'give' that much to the flavour TBH.

Do you have any rosemary or thyme?

Toss them in the parsley afterwards, if that happens to be the herb you've got that you want to use. It doesn't stand up a all to the heat of the oven (you need something woody for that, as amberleaf said).

Ok I just whipped them out and added rosemary. I hope they turn out ok, I accidently boiled them a bit too much Blush

Lady, our house is a building site (literally), you can come when it's all finished :o

Dont worry about overboiling, as long as you cook them long enough [or at a high temp] they will be nice and crispy.

They're looking good already! Ooh I'm excited! DP usually does them in the deep fat fryer so it's been a while since we've had proper roasties!

They should be OK, even if you have boiled them a little too much (I do this all the time and they survive). Just make sure you don't use too much oil though as they go mushy. Turn them carefully and regularly.

They smell goooooooood. I just opened the oven door and a big waft of garlic hit me in the face. It's made me very hungry and a bit drooly

We're having pork, It's been in the slow cooker since yesterday. I think we'll get a chicken for the next roast dinner and I can do my fab roasties again, garlic always goes best with chicken imo, or bread.

sounds good. I boil my pots for 10 mins before tossing them. In and out of pan. Then roast them for 30-40 mins. they were yummy this evening! had roast chicken! I add rosemary and garlic

I wouldn't roast old potatoes in olive oil, rape is better for me, too strong a taste for the amount that ends up in the potato. Some breadcrumbs with rosemary, garlic and S+P is good.

If I use olive oil, I also use butter too which gives it a lovely taste.

My fav fav is roasties made with beef dripping, try it and the smells will transport you back in time to those days of grannies cooking on a sunday!
