Village show standard Victoria Sponge Cake!

I've made a sponge once and now I am baking the above cake as per the MN recipe by slubberdeguillion for the first time tonight.

It's a practice run for the Jubillee and I am taking it to a dear friend tomorrow. Victoria Sponge is her fav cake so I had better do a good job.

Anyone else making these over the next few weeks? Let's chat!

I've got 8" tins so I'm using 3 eggs (room temp).
Weigh eggs and measure equal weight portions of self raise flour, butter and white caster sugar. Done!
2 tins greased but not lined.

(Waiting for Chelsea to score - champ league final)

I haven't sifted flour since home ec classes!

My lightly beaten eggs have been introduced to creamed sugar and butter little bit by bit. It is very fluffy now. Wink

Ooh interesting that you weigh the eggs. The best recipe I have tried has been 200g each SR flour, butter and caster sugar, 3 eggs, tsp baking powder - although mine are usually chocolate so 3 tbsp cocoa powder too.

What was the egg weight?

It's very light - I'm very pleased. Can't wait to dress it tomorrow. Contrary to instructions I WILL be using cream.

my fave recipe is mary berry's classic victoria sponge, works every time, all in one method.

well the end result was fantastic!! Very light and lovely & my friend enjoyed it very much.

I forgot to take a photo though - guess I'll have to make another one (DBIL has put in a request)
