Thai/chinese salad dressing recipe

I want to make a salad with blanched asparagus, edamame, sugar snaps and fine green beans.

I've got lots of ingredients: sweet chilli sauce, dried chillies, lime juice, lemon juice, honey, soy sauce, ginger, lemongrass, sesame oil, sunflower oil, peanuts, peanut butter, ketchup etc.

Anyone got any good recipes for a dressing?

I had an Asian turkey salad recently - dressing was lime juice, soft brown sugar, mint leaves and fish sauce

Sounds good, thanks. Unfortunately it has to be vegetarian so I'll have to substitute the fish sauce for soy sauce.

That should work. It was really fresh and lovely Grin

I reckon lime juice, chilli, soy, fresh coriander, sugar, garlic, fresh ginger or galangal. I wouldn't put any oil in it.
