Mushrooms - stalks or not?

So do you peel mushrooms and remove stalks or just wipe and slice skins, stalks and all? Does it make much difference to flavour? I do both and can't decide which is right? Or do you alternate depending on recipes?

I usually use it all as i can't bear throwing food away. All tastes the same to me!

SquishyCinnamonSwirls · 17/05/2012 18:19

wipe and slice, it all goes in.

Kaloobear · 17/05/2012 18:25

Wipe and slice all of it.

(Sounds a bit filthy Grin)

Beanbagz · 17/05/2012 18:25

I use it all. If there's obvious dirt I give them a quick wipe and then slice.

CelticPromise · 17/05/2012 18:30

Quick wipe if necessary and use it all.

Life is to short to peel mushrooms FFS!

Kaloobear · 17/05/2012 18:35

I don't even think I'd know how to peel a mushroom.

NettoSuperstar · 17/05/2012 18:36

Wipe and slice.

BlackAffronted · 17/05/2012 18:37

No to wiping, yes to stalks. I would knock off any obvious dirt, buts thats all. People who peel are nuts Grin

OneHandFlapping · 17/05/2012 18:41

Wash under tap, and cut off any black ends from stalks.

multipoodles · 17/05/2012 19:07

Think I might be nuts then as I always peeled and removed stalks up until this year then I thought that every mushroom I had in a restaurant was intact so started to leave them as one. I did do the move gradually and slice of the stalks level with the mushroom so it sort of looked even.. think I need to get out more!!

Methe · 17/05/2012 19:39

Slice.cook.eat. Grin

clippityclop · 17/05/2012 19:42

Wipe, chop and cook the lot. Yum!

peeriebear · 17/05/2012 19:42

I only peel if I've left them in the fridge for yonks and they've started to go icky.

The keen kitchen crap collector can buy amushroom brush

winnybella · 17/05/2012 20:08

Depends. White mushrooms- peel, but leave stalks on (minus the black bit at the end).

Wild mushrooms- just dust off the earth.

cluccles · 18/05/2012 08:11

only peel if they are a bit old. eat stalks but trim the end

love mushrooms

GinPalace · 18/05/2012 08:18

wipe and slice for me.

Flavour wise stalk and body is same. If in doubt eat a bit of both raw and compare - no different. :)
The texture is slightly different but in most dishes that would not matter the tiniest bit. To me it is a waste to throw the stalk.

My Mum peels and I can confirm - she is a little mad. Takes ages when a wipe with a damp kitchen towel (if necessary) does the job in half the time. IMO

Once when I was a teen and budding chef I spent two hours individually peeling all the grapes from a bunch to go in my chicken dish - Arf! Those were the days. I was so keen and had so much time Grin

BlackAffronted · 18/05/2012 13:22

I laugh when I see Masterchef contestants peel peas, how long must that take?

GinPalace · 18/05/2012 20:07

I do peel broad beans once I have taken them out of the pod... doesn't take that long and much more sweet and tender without the shell - worth it! Grin

AmberLeaf · 19/05/2012 16:37

Maybe a quick rinse if they are really muddy, but on the whole I just chop and cook!

Eat stalks too its just the same as the rest of it anyway, why waste it?
