Mushrooms - stalks or not?

So do you peel mushrooms and remove stalks or just wipe and slice skins, stalks and all? Does it make much difference to flavour? I do both and can't decide which is right? Or do you alternate depending on recipes?

I usually use it all as i can't bear throwing food away. All tastes the same to me!

I use it all. If there's obvious dirt I give them a quick wipe and then slice.

Wash under tap, and cut off any black ends from stalks.

Think I might be nuts then as I always peeled and removed stalks up until this year then I thought that every mushroom I had in a restaurant was intact so started to leave them as one. I did do the move gradually and slice of the stalks level with the mushroom so it sort of looked even.. think I need to get out more!!

Depends. White mushrooms- peel, but leave stalks on (minus the black bit at the end).

Wild mushrooms- just dust off the earth.

only peel if they are a bit old. eat stalks but trim the end

Flavour wise stalk and body is same. If in doubt eat a bit of both raw and compare - no different. :)
The texture is slightly different but in most dishes that would not matter the tiniest bit. To me it is a waste to throw the stalk.

My Mum peels and I can confirm - she is a little mad. Takes ages when a wipe with a damp kitchen towel (if necessary) does the job in half the time. IMO

Once when I was a teen and budding chef I spent two hours individually peeling all the grapes from a bunch to go in my chicken dish - Arf! Those were the days. I was so keen and had so much time Grin

I do peel broad beans once I have taken them out of the pod... doesn't take that long and much more sweet and tender without the shell - worth it! Grin

Maybe a quick rinse if they are really muddy, but on the whole I just chop and cook!

Eat stalks too its just the same as the rest of it anyway, why waste it?
