Please help...... I have a pork problem!

Oh, what a fool. I bought some "diced pork" at our local farm yesterday, then realised today as I came to cook it that I have no clue as to what cut of meat it is, so don't know how to cook it

(I am mostly veggie too, haven't cooked "proper" meat for over 20 years....)

I tried frying it and then simmering it in a thai/stay type sauce, but it was really tough, DD said "Mummy, I don't like pork...". Not sure if I overcooked it or undercooked it!!

Is there a method of cooking pork i.e. stir-frying or stewing, that will work regardless of the type of meat? I have loads left defrosting, so need to do something with it tomorrow

Casserole it or curry it. If it's been diced it's probably a 'stewing cut' so you'll need to cook it long and slow.

A curry would be nice (not very kosher though!)
Casserole with apples/cider
Cassoulet with beans/tomato/bacon etc
Casseroled with fennel/white wine.
Goulasch with paprika/peppers/cream

Slow cooking is your friend. If you google diced pork shoulder recipes maybe? That is a cut for slow cooking.

Ok, this is a lovely casserole with pork.

You put the diced pork in a pot, season with salt and pepper add some water, and simmer for half an hour.Add diced swede (or kohlrabi) and carrots, and diced potatoes. More potatoes than carrots and swede to be fair. Leave to stew for an hour, , add a finely chopped garlic clove or two, add half a leek, chopped in 1cm lenghts. Simmer for another hour... you will need to add some water now and then. Add a pinch or two of thyme. Lovely.

It should be a mush, and the pork nearly invisible. But it is really yummy. Subtle flavours.

Slow cooker is in use atm, I will google some recipes and cook tomorrow :)

Can you over cook it?
