HELP - fillet steak

I just went to the butchers and bought some fillet steak for DH (am veggie but it's his bday so thought it would be a nice treat) - was Shock Shock Shock at the price £12.50!! So I don't want to get it wrong. I asked the butcher how to cook it and he said grill or fry.

Thinking of frying it but it's quite a thick piece. DH likes it medium rare. How do I know when it's ready? (I'd say it's about 3.5 inches high)
and do I fry it just by itself, garlic? onions? wine? I have really no idea

I use Hestons method of cooking steak, and it has never failed me. Take your steak out of teh fridge at leats an hour before you want to cook it, never cook a very cold steak. Heat the frying pan very hot with some oil. Salt the steak just before cooking, but no pepper at this point, it will only burn. Place the steak into the hot pan, and then flip after 15/20 seconds. Flip again after another 15/20 seconds. Keep doing this until you get the right "feel" to teh steak (use the finger test to see when it is done). Leave to rest for at least 15 minutes! That is important, let the juices rest to keep it lovely & moist. Add pepper when you serve. Cook onoins/mushrooms etc in a seperate pan if you want those.

will the steak not go cold if it rests for 15 minutes?
