This is the easiest fish dish in the world to make and can be great fun by getting the kids to make their own parcels and choose what goes in. For 4 parcels you need:
4 white fish fillets (no bones or skin where possible)
1 pack of cherry tomatoes
8 spring onions
Bunch of basil
1 lemon
fish stock or white wine (a splash for each parcel)
butter
salt/pepper
chilli (if you like)
olive oil
aluminium foil
Additional extras could include roasted sweet red peppers, olives, fennel, spinach ? whatever you and the kids fancy.
Method
Cut a large piece of aluminium foil - big enough to make a parcel with your fish fillet and other ingredients. I double up for extra strength
Place your fish in the centre of the foil and season with salt and pepper. Add 3-4 cherry tomatoes, 3-4 chopped basil leaves, chopped spring onions, chopped chilli (if you like) and a knob of butter. Give each fish parcel a squeeze of lemon juice and a splash of stock or wine and drizzle with some olive oil.
Then loosely wrap and secure each parcel tightly to completely enclose the ingredients ? mine looks a bit like a cornish pasty !!.Place in a moderate oven (gas mark 6, 200C) for 15 minutes.
Serve the fish and delicious sauce with rice or crispy roasted potatoes for texture.
