Caramel without the condensed milk?

Not a mum, but a dad here, but regular mums-netter (and very active dad to 2 dc's) :) Whenever I make caramel from condensed milk, it tastes.... just odd. Odd, like condensed milk odd. How do you make caramel without it? It's for a banoffee pie, so needs to be relatively thick (but not break your teeth when you chew thick).

Taa ever so!

Make your own dulche de leche:

500g castor sugar
1l milk
vanilla essence

Heat sugar and milk with vanilla gently until sugar has dissolved
Boil stirring until the right colour and thickness

Could possibly use a slow cooker - I bung it in the simmering oven of the Aga

Makes about 2 jars - as long as you don't need to taste too much.
