How do you make light and crispy batter?

I usually coat whit fish or chicken goujons in panko but decided to do batter with my haddock this evening. Used Delia's recipe for batter which is simply flour, water and salt. Found it quite dense although was crisp. How do you make yours to be more light and crispy?

Just replace the normal water in the recipe with the same amount of fizzy
