Hi

Ashamed to say I've never made my own, do I just chop toss in oil and oven cook?

Temp? How long? Please Smile

I chop, put in a large food bag with rnough oil to coat them and some rock salt and shake. Put on baking tray, a little more salt (personal preference), also sometimes pepper and sometimes smoked paprika. Into pre-heated oven on gas mark 6 and cook for usually about 30 minutes. Until they're quite crispy anyway. Also lovely using flavoured oil, like garlic and chilli olive oil.

Put oven on at 200 and baking tray that has a splash of olive oil in the oven. Chop potatoes into wedge shapes. When tray is hot, chuck in wedges and shake. They should sizzle! Season as you wish, shake again and put in oven for about 45 minutes.

You can also coat in seasoned flour, so they taste like takeaway/American wedges.

I always, steam for a bit first, quickens cooking, 20-30 minutes in a 220 oven, I don't bother coating in oil in a bag, just put the oil in the tin. I but garlic powder, salt, pepper, and some other spices, or rosemary depending on what I'm serving them with.

I do same as Littlemachine but use either Scwartz cajun black spices or season all, then I'm lazy!

I don't turn.

I tend to do half with paprika and the other half with garam masala and chilli. Al with salt and pepper. sometimes I add a splash of lemon.
