I've got a busy couple of weeks ahead and will need to work several hours in the evening when DCs are asleep. This is when I usually clear up the kitchen and wash up. As I won't have much time for clearing up and washing up I need some recipes for one-pot meals that can be prepared and cooked within about 45 mins. Please share your favourites. Thanks

I make that risotto all the time, leaving out just the prawns usually (to keep costs down). I even made it for a dinner party :)

Chorizo stew - chop and fry chorizo and onion, then add some halved new potatoes. Add stock cube and leave to simmer till potatoes are mostly cooked, then add one can drained butterbeans and one can drained chickpeas. Cook a few more minutes. If you have some spinach/kale etc, add at the end.

Lentils - chop and fry onion, carrots, celery, bacon and mushrooms. add lentils (the green/blue sort) and stock and simmer till lentils are cooked.

Everyone I've ever served that oven risotto to absolutely loves it. Dont bother with prawns here either

An in asparagus mode at the moment and the following have been amazing
Asparagus tomato and olives I severs with chicken wrapped in Parma ham
But look on the good food website and put in one pot!
