Interesting salads

With the arrival of long sunny days I want to make more salads for lunch.

Yesterday we had lettuce with crunchy bacon, sautéed potatoes, fried onions, cucumber and honey roasted cherry tomatoes with a honey, herb and balsamic vinegar dressing.

What are your favourite salads?

Feta, pea and mint salad is like summer on a plate.

Roasted butternut squash, sweet potato and crumbled goats cheese on a bed of baby spinach is another favourite.

Chicken and bacon with baby spinach and good garlicky dressing. Yum.

(I'm in hospital and hating the awful food so am now dreaming of lovely fresh salads with fresh bread..... I may be dribbling a little)

Delia has a great recipe for cous cous, roast vegetables and firm goats cheese with a spicy dressing. I often make a big bowl for BBQ's and summer dinner parties and it always goes down a treat. It can be a little time consuming but I often cut corners such as not skinning the tomatoes etc and it still turns out lovely.

Another favourite of mine (DH won't touch it though) is a kind of Tex Mex one:

Lettuce
Chunks of chicken breast cooked with cumin and paprika
Avocado
Prawns
Kidney beans
Fresh or pickled chili
A spicy lemon dressing

cherry toms sliced in half
grapes in half
feta cheese chunks
bacon
artichoke from a jar sliced into chunks
basil
salt and pepper
drizzle of oil from artichoke jar

served on toasted bread

Blue cheese, pear, crispy pancetta with peppery leaves and a balsamic dressing.

Peppery leaves, fried halloumi, chilli oil dressing

Old school, grated carrot, cucumber, iceberg lettuce, cress, grated cheese, soft boiled egg and a shit load of salad cream.

Caesar with grilled chicken breast.

DH did bring me in a ham and avocado salad yesterday with buttered french stick so I've had a salad fix thankfully.

He does a mean lamb shank cooked in red wine. That's what I've ordered for my returning home meal. :)

@moveitmoveit - shit load of salad cream, my guilty pleasure.

@viking - tin (yes tin) of lentils drained and rinsed, bung in roasted tomatoes and red onions, blanched chopped green beans, fried Hallumi, lots of chopped corriander and a good garlicy dressing. Or new potatoes, watercress, rocket, beetroot and smoked trout with a mayo/creme fraiche/horseradish dressing. Or nicoise (sp?) which is new pots, blanched green beans, tomatoes, olives, capers, hb eggs and a good garlicy dressing - I like a bit of chopped fresh tarragon in it too. Or shredded cabbage, carrots, cucumber, red and yellow pepper, any kind of rice noodles, prawns, chopped corriander mint and basil and a Thai dressing (Jamie has a nice one in one of his books). I do love a salad.

Pasta salad. The best is gala melon and feta in a vinagarette, with fussli for the pasta base. Our old standby is cheap and cheerful mild cheddar, tomatoes, sweetcorn, cucumbers, and vinagarette, with either macaroni or penne or fussili.
