leftover chicken

So I have chicken leftovers fron sunday dinner, tonght me and dd are having chicken supreme which will use about half what can I use the rest in? I usully do sweet and sour or pasta with veg and pesto with it but fancy a change. I dont have a pie dish yet so chicken pie is out of the question unfortunatley.

I normally do chicken risotto.

I usually do a chicken and bacon or chicken and leek risotto.

I usually sauté some onions and mushrooms, chuck in a few peas and a tin of condensed soup and stick on a pastry top. Naughty but very nice

Chicken and ham pie. Fry an onion, some garlic and soften. Add chicken and ham pieces, tarragon, stock and a splash of cream. Put in dish. Cover with puff pastry top and eggwash. Cook for around 30 mins.

Chicken waldorf salad (that's what I'm doing tomorrow).

coronation chicken.

chicken quesadillas.

Chicken and avocado sandwich (toast the bread and add a bit of mayo and paprika for extra flavour).

Chicken with pearl barley - fry up some chopped onion, carrot and celery (plus any other veg that need using up), add pearl barley, add stock cube and water, leave to simmer for 30 mins, then add shredded chicken. very comforting. can make it wetter and soupier or drier and risotto-ier as you wish.

Curry? Could freeze it if you don't want it straight away?

Thanks some great ideas we had chicken stew and dd loved it. Going to try some of the others next time, never made risotto before think im going to try though.
