I have just bought some pastry cutters and am planning to make some biscuits with dd1 - to feel like a proper mum ;-)! BUT - I haven't got a recipe for making the biscuit dough - could somebody help me out?

Scotch Shortbread

1 cup butter
1 cup granulated sugar
3 cups all-purpose flour

Thoroughly cream sugar and butter. Add 2 1/2 cups of the flour and mix thoroughly. Turn out onto a surface floured with remaining 1/2 cup of flour. Knead dough until it cracks on surface. Roll out 1/4-inch thick and cut out with cutters. Prick cookies with fork tines and place on ungreased cookie sheets. Bake at 275° for about 45 to 55 minutes, or until lightly browned.
Makes about 2 dozen shortbread cookies.

Cheese biscuits

1 cup flour
2 teaspoons baking flour
pinch of dry mustard (optional)
pinch cayene pepper (optional)
75g butter
3/4 cup of grated cheese
1 egg

Sift dry ingredients, rub in butter (much fun for a small person to help here) stir in the cheese. Lightly beat the egg then add to the other ingredients. Knead the mixture into a pliable ball of dough. Roll out thin on a floured board, cut into shapes and bake for 10 minutes at 190 degrees C. I often only bake half of the recipe and leave the rest in the fridge, wrapped in clingfilm, for another day.

Belgium biscuits (a NZ favourite)

125g butter (softened)
1/4 cup of brown sugar
1 egg
2 cups of flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon mixed spice
1 teaspoon cocoa

Cream butter and sugar, add egg and beat. Sift dry ingredients and add. Keand into a dough, roll and cut out. Bake at 180 degrees C for 15 minutes, or until golden. Ice half with plain icing and stick to an uniced one with raspberry jam (if you want)
