Cake that would survive 4 days and 5 hour journey

We are away for DP's bday, it's not until next Wed.
If I baked something, I'm thinking gingerbread? On Saturday, would it be ok to eat on Wed? Would it survive the 5 hour car journey?

Help please! I can't bake whilst we are away

gingerbread would probably be ok. Alternatively a fruit cake?

He is a fussy one so almond is out sadly.
