Can I freeze potatoes?

Sorry if this is a stupid question!!

Can I peel and boil them and freeze?
Could I roast them and freeze?
Could I make wedges and freeze them?

yes yes yes. and mash too although it does go a little grainy i find.

I boil and mash and freeze in portions and thaw in microwave to piping hot. I freeze roast potato and then recook by using in things like papas fritas with chorizo.

I also do chips lightly cooked and then frozen then refry once thawed like Heston. They come out really crunchy.

Thats great thanks to you both. I have a sack of potatoes from a farm and large pans on stand by right now!

What container should I freeze them in? I have bags, foil trays and those plastic ones that can go anywhere!

I use bags as it's easier to cram them into weird corners, especially the mash.
