Butternut squash anyone?

This hard, yellow bell-shaped object has been lying in my fridge since last week and I STILL haven't attempted to cook it. I only bought it cos it was on offer in Sainsbury's and now I'm sure it's past its best but I can't bear to chuck it.

Any ideas on a warm butterbut meal for dh to come home to later? (Bearing in mind I haven't got much fresh stuff to accompany it)

I made lovely butternut squash soup last week.

Fry an onion in butter until soft - add squash and fry for 5 mins or so. Then add about a pint of milk and some vegetable stock powder (or stock cube). Grate some nutmeg or use a pinch of mace and then lots of black pepper.

Simmer for 1/2 hour then blitz until smooth. Add a pinch of mace and more black pepper to serve.

I have also made oven roasted root veg and included squash in the mix. This is lovely served with roast chicken or just on its own with some rice.

I made a thick butternut squash soup last week. Chopped squash, onion, parsnip, carrot and an apple. Everything in a saucepan with some veg stock, cooked then blended. Very nice with warm crusty bread. Ingrediants can vary, e.g. potato instead of parsnip.

Just cut it in half, scoop out seeds and dot with a bit of butter and roast it, serve with anything!

Or - cut it in half, peel it, scoop out seeds chop into pieces and boil and mash with butter, serve it with anything. you could add the butternut squash mash to ordinary mash potato so it's mor filling.

You could do the same as above again but don't boil it just roast it with whatever other veggies you have lying around.

Wonderful easy suggestions! I think I'll just roast it tonight so hopefully we'll be able to taste the flavour and decide if we really like it.

Jamie Oliver's squash stuffed with rice is very nice - think I described it on another thread but i could copy it out if any use.

Thomcat - thanks, it was delicious. It tastes suprisingly like melon! I used it in a risotto in the end and it was lovely. DH sends his approval!

dh made a kind of chickeny pie thing with butternut squash once..
cooked chicken and onion and mushrooms i think. bolied butternut squash and mashed it with butter and milk - but a bit more milk then normal then maixed it with chicken stuff as a sauce then put it in ramekins (???) and covered it with a puff pastry lid
20 mins in the oven - me and ds loved it!
we use it alot - one of ds's fave foods
