stir-frying pork?

So it's chow mein for dinner tonight, YUM, but today I'm making it with pork instead of the usual chicken. Because I'm crazy like that, y'know, living life on the edge. and the pork was cheaper

Might sound a little bit inept here, but I've never cooked pork with this method before (frying it in a pan). I've done chicken a million times, fry it in a little oil and it's done in not very much time, but is pork different? Anything specific I need to do? Does it take less/more time? It's pre-cut into strips so theoretically not much that can go wrong...

Cook it as you would chicken :) are you adding a sauce?

Yep, it's a pretty basic chow mein really just the pork, noodles and sauce out of a packet Blush

Ah! I was going to suggest you marinate the pork before hand, but you wont really need to if you are using a readymade sauce :)

For future, IMO the best pork stir fry is made with slow roast leftover pork. I sometimes 24 hr roast a whole shoulder and freeze the leftovers in batches for use in stir fries.
