Potatoes - overrun with the blighters

In the name of economy I nought a 5kg pack of potatoes this week but now need to find lots of yummy and reasonably easy/quick ideas for how to continue using them into next week. Mash, wedges, shepherds pie (I know this comes under the mash heading) are on the list....

Any ideas for potato pie/bake type things? Any other offerings also welcome.

dauphinoise potatoes for a side dish.

Sliced on top of hotpots. Do a stew/casserole put in a casserole dish, top with sliced potato, dot with a bit of butter, and oven bake til the potatoes are cooked and browned.

Cheese and potato pie, mix mashed potato with chopped onion and cheese. Then put in an oven dish and bake for 30/40 mins until browned.

If you run out of ideas, you could par boil and freeze. Then use for wedges, mash etc later.

You could also make into mash, portion up and freeze.

cheesy potato moussaka
slices cooked potato to fill 1/3 depth of a dish
mixture baked beans,pinch cumin,onion and chili
rest potatoes on top
white sauce over
grated cheese
30-40minss in the oven
serve with salad of leaves,red pepper and sweetcorn

alittlebitshy Instead of baking the loaf from wheat flour you mix half wheat flour and half cooked, cooled potatoes. It's a German thing really, Kartoffelbrot, but it is fab. Big slabs of it toasted and covered with cheese and shopped onions then slapped under the grill, or just in a big sandwich with rocket and thinly sliced rare beef and a tiny dob of horseradish.

Potato pancakes! Grate 1kg potatoes, squeeze out moisture, mix with half a chopped onion, a quarter of a cup of flour, a beaten egg and salt to taste, then fry until golden. Yum.

Par boil them and freeze, then chuck in the hot fat when you want roasters.
