Cakes which can be frozen?!

I'm preparing a cake sale for next month and I am looking at cakes which can be made in advance and frozen.

At the present, I have thought of many cakes but I do not think any can be frozen, they are:

• Apple cake
• Low fat carrot cake
• Gingerbread men
• Sticky ginger pudding
• Poppy seeds and lemon loaf

Can you please suggest cakes which can be frozen?

scones, pancakes, fruit loaf, all bran loaf, victoria sponge (fill and ice on defrosting), cup cakes without frosting, lemon drizzle without the drizzle, cookie dough

tea loaf, i often make two and freeze one. mmm.

I would go ahead and freeze all on your list apart from the gingerbread men. Why do you think you can't freeze the others? AGree with sharon about not icing til the cakes are defrosted.
