When I was a lass me and my mum used to make coconut cake all the time. IIRC it was basically sponge with dessicated coconut in it and it was baked in a deep fruit cake style tin. Having had something similar on hols in Greece last year me and dd would like to make it but having looked everywhere the only recipes I can find on the web are for cakes with coconut frosting. If anyone has a recipe we would be really grateful - otherwise we will have to start experimenting with sponge recipes!
