Parmesan replacement needed please.

I'm thinking of cooking a baked chicken/polenta/tomato/garlic/herb dish for tea tomorrow. It usually has a generous grating of parmesan (or v.strong cheddar if pushed) to give a bit of a savoury tang and crispiness and some extra colour.

However, my DDad doesn't do cheese. Anyone got any ideas on something I could do to keep it tasty without adding cheese? I'm not sure if an extra glug of olive oil would be enough TBH, perhaps red pepper or maybe some vinegar? Gah! Don't know! Help, please.

Would the anchovies melt/disappear? The DCs think they don't like fish - but would eat it if it was hidden.

bacon - cook in pan take out + cook onions in bacon fat and more olive oil... then also use anchovies.. or ikea sprats!.. they will melt and disappear but add a rich salty flavour.. yummy!
