How do i make pastry...

Help every time i try to make a quiche or pie the pastry always ends in disaster either too crumbly or just tastes bloody awful. I dont want to buy the already made stuff i want to feel the sense of achievement of getting it right cus its really bugging me that i cant do it.

My top tip is to wash your hands and wrists all the way up to the elbows in very cold water, just before you start. The colder the hands, the lighter the pastry.

(use Delia for measurements BTW)
