I need a cake challenge...

Right so I have mastered bakery somewhat over the last few months. From tarts, to sticky toffee pudding, to bread, naans etc.

I am ready for something a little more elaborate....any inspiration, recipes etc greatly received!! My preference is a cake of sorts, not that into sugar icing, but all up for a technically challenging dish.

My daughter's after a Rapunzel tower for her birthday (end of next month), complete with Rapunzel, Pascal and Mother Gothel. She prefers chocolate sponge, but wants cream too. She's open to rice crispie cake moulding for the tower.

I have done macaroons before, yummy....but they got stuck to the tray(baking paper and tried on baking sheets)is there a way around this???

To release macarons from the baking paper when you lift hte tray from the oven gently lift on corner of the baking paper and pout a little water under it. The steam softens the bottom of the paper and the macaron lift off.
