Single Parsnip WLTM Interesting Recipe!

I have a one parsnip my fridge. I must have bought it with specific recipe in mind but i can't for the life of me think what it was.

I have other vegetable too (carrots, onions, potatoes & carrots) but why only one parsnip?

DD recently became vegetarian so maybe i'd picked something out of my cookbooks.

Any ideas?

Were you going to mash it with potato and use it to top something?

Parsnips make amazing crisps. Peel off strips with a Y peeler jobbie and deep fry. Yum.

I know this doesn't help at all but hey ho!

Was it going to be part of a soup?

I've seen a recipe somewhere for parsnip with pasta (julienne, then wilt, then stir into the drained pasta with butter, I think).

Parsnip :steamed, pureed with butter and a bit of nutmeg

Halved, par-boiled and coated with breadcrumbs and (vegetarian) pretend parmesan. Doesn't add much flavour but adds 'crunch'

Chopped and fed to a small vegetable eating animal of your choice (our guinea-pigs are always ready to step in .In their role of Chief Vegetable Disposal Experts)

I'd make Jamie Oliver's pork parsnip and pears traybake but with just a suggestion of parsnip Grin. Trouble is you'll then go out and buy pears and pork and then be left with one pear too many and have to find a recipe to use up one pear. And so on forever.

And your DD wouldn't be able to have any.

Chuck it into a soup with potato, carrot, swede, onion, whatever you have. Blend. It gives a lovely hint of sweetness to everything.

Side tracking a bit here but do you take the middle hard part out of the parsnip before cooking?

I do if I'm going to mash it. I am less bothered if I'm going to roast it.

And I am more bothered about doing it for large specimens than small ones.

Much as i would love to make the Jamie Oliver pork, parsnip & pear traybake (i'd forgotton how yummy that was) i'd have to go shopping for the rest of the ingredients.

I think i'm going to use it in mash tonight as i have some quorn sausages for dinner.

Soup for the onions in my fridge i think as i seem to have bought 3 larges bags of them.
