Yikes - what temperature and do I cool it in the tin?

Just had one muffin disaster and couldn't bear a lemon drizzle flop on top of that - anyone?

yes cool in tin.

Remember to prick it whilst hot and squeeze half a lemon over it.

Thanks Mars ... you wouldn't believe what I did to the muffins though ... melted the butter, unthinkingly turned the oven off as I took the butter out so put muffins into rapidly cooling oven & only discovered it 15 mins later - duh ! Ah well, they may be flat but they'll taste okay.

Now, back to the lemon drizzle - mmmmmm.

Okay, so I halved the recipe, used a tin that was probably too big, opened the oven door after 20 mins to check, flattened it, blah blah blah. Silly old me. And I'm usually a really good baker - just having a bad day!!

What you should do is use the whole recipe. Cut the cake in half and freeze half.

I'm sorry that it didn't work.

That's what i'll do next time Mars. Buy hey ... it mightn't look a picture today but with a layer of icing I bet it'll taste just fine. Will try again during the week with the full recipe!

I made it with plain flour and oil, no self raising or butter and still turned out fab!

It really is a tasty cake.
