Help please! I need inspiration! I have about 2 packs of Feta in the fridge that need using up, does anybody have any ideas? Preferably something warm as the weather at the moment is not lending itself to salads! TIA

Jamie Oliver's 30 minute meals has a Cypriot chicken recipe that uses feta and is great. Mix it with sundried tomatoes, basil, garlic and lemon rind and stuff chicken breasts. Yum.

Ooh, that sounds tasty, thanks Wem - and I have most of those ingredients already! I don't have that JO book (although about 4 others!), is it online at all?

Any more suggestions also gratefully received in case I have more than I think!

Um, I do a saganaki type thing..

so you cut the feta in slices and arrange in a baking dish (not a metal one) alternating with thinly sliced tomato. Sprinkle over spring onions, chopped green chilli (or chilli flakes, or no chilli if you don't like it), oregano and then drizzle with good olive oil.

Bake in the oven for - well it depends on the size of dish really - you'll know when it's ready IYKWIM? THe cheese will be all lovely and hot and the oil will be bubbling a bit at the edges.

It's delish with french bread.

I love feta just on top of spicy tomato pasta.

So would have pasta with tomato sauce, some peppers & chilli maybe (goes well with feta) then crumble feta on top at the end, some chopped olives good on top too,

The hotter & spicier the better for the sauce because the tart saltiness of the feta really compliments.

Also nice on pizza! yum Grin

For my lunch today I shall be having vermicelli pasta with aubergine pesto, topped with feta cheese and fresh rocket. It's bloody lovely and works well with any pesto!

I have some to use up before we go on holiday next week. My lunch tomorrow's lunch will be a warm salad with steamed leek, roasted couscous, chunks of feta and vinaigrette.

[resists the temptation to buy tomatoes in order to try the saganaki dish instead]

we put feta into frittata with bacon lardons and peas.

i also make a greek stew thing from How to Eat, where you slowly cook some lamb in white wine and tinned toms, add lots of herbs, and cook some pasta into it towards the end of cooking. then crumble lots of feta over the top.

Courgette and feta fritters -

finely chop 2 courgettes (I throw away the nasty seedy bit)
finely chop one small onion or a couple of spring onions
Chuck the above in a bowl and add 100g flour about half a packet of diced feta then beat in an egg and a bit of milk if it needs it; add some chilli flakes

Get tablespoons of it and shallow fry.

Feta pizza thingies -

Get some pitta bread and stcik on baking tray
Mash some feta, some finely chopped red onion plus anything else you fancy (eg herbs, finely chopped red pepper, whatever). Add a splosh of olive oil and some pepper. Spread over the pittas and bake until bubbly and golden.

Feta chilli dip -

mash some feta; add a finely chopped green chilli, lots of black pepper and a bit of yoghurt to loosen plus a big squeeze of lemon - eat with warm pitta strips

Just a little update. Last night we had a version of JO's Cypriot chicken - chicken breast stuffed with feta, tomatoes & basil - and then wrapped it in bacon & baked in the oven. We served it with HM potato wedges & sauteed leeks & a sauvignon blanc Wine It was absolutely delicious!

Tomorrow we may try pasta with a chilli tomato sauce & feta crumbled over the top.

I may also have to buy some more feta to try out some of these other recipes!

There is a fruit cake in one of the gh books that has a layer of feta/Cheshire/other crumbly cheese in the middel.

Feta is good with butternut squash in quiche or filo pastry triangles.

My favourite use of it is a version of a greek salad- chopped cherry tomatoes, cucumber, black olives, feta and mint with a lemon juice and olive oil dressing. Fab stuffed into pitta bread.

Remus, I'm going to make that dip this week, and squeeze it on the side of pate and soup. Probably doesn't go but sounds delicious!

I love baked sweet potato (just baked like a regular spud but it doesn't take as long) just cut open and smothered topped with cubes of feta and sliced spring onion. Simple but amazing.
