I am generally pretty healthy and eat lots of lentils and veg. What healthy things do you eat and why?

I have recently started eating quinoa and i have oat groats in the cupboard to try after a visit to a health food shop.

This is an adaptation of an Ottolenghi lentil salad.

I make it with dried puy lentils, feta cheese (or none) and what herbs I have.

It is delicious & keeps well for a few days.

soup, soup and more soup.

one version is, broad beans ( half a frozen bag) an onion and a carrot. I use the knorr stock pot things for stock, for broad bean soup I like the chicken stock one, once cooked blend.

another I make is veg stock about 1/2 litre, a tin toms, a clove garlic, a red pepper, onion, carrot and can add a bit of turnip, butternut squash if you have them, once cooked add milk to thin and blend.

At the mo my fav is a large sweet potato, half a butternut squash , an onion and a handful of red lentils, add either veg or chicken stock.

I dont sweat my veg , I just bung it in together.
