ideas for dinner part with vegetarians

Any ideas for something not too boring for a dinner party with vegetarian friends? They don't eat fish either. Many thanks.

Vegetarian Lasagne,Moussaka,Mushroom plait,Sweet potato stew.

Carrot and Coriander Soup yummy and delicious bread to start.

We have some friends coming for dinner tomorrow night and one is veggie. I am planning Indian - dahl, veggie curry, a chicken curry for the meat eaters, rice and chapattis.

Quorn Wellington - either a large one or individual ones. Very easy and impressive simply make a nice mushroomy based stuffing and place between two quorn fillets. wrap in puff pastry and bake, serve with onion gravy.

My mil did this amazing casserole on Christmas Day for the veggies that were coming. It was basically chunks of sweet potato and other root veg, with a marinade of ginger, chillies, tomato puree and other spices. These were marinaded overnight and then the whole lot were boiled in veg stock and coconut milk. It was delicious!

Filo pastry basket with sauteed oyster mushrooms, saffron cream sauce and on a bed of puy lentils.

Goes down a treat in our restaurant!

One of my veggie DH's favourites is ratatouille - dead simple, which I always find works best for dinner parties (but then I am a rubbish cook). You can tart it up a bit by serving it with some fancy bread and posh red wine.

Budababe's curry and Rhubarb's casserole sound delicious!

Some v nice sounding suggestions. DH will do the cooking. We had some friends over a couple of weeks ago but at least they ate fish. These ones don't.

Good idea about the nice bread. At least something i know i can do well myself!

Off to google puy lentils, never heard of them before.
