Ideas for red cabbage please!

All we ever do is cook it with apples, onion, etc. Could do with some fresh ideas. Could I use it in coleslaw instead of white cabbage?

yep - saw a recipe think it was in Good Housekeeping for coleslaw - looks yummy.

Yes.
Shred it very very finely though.
Add coriander and lime juice and a good mayonnaise (or a vinaigrette).
Delicious!

Oh bum, just seen you first post Northender! sorry, this might be familiar.

1 lb red cabbage
1 large onion
1 large cooking apple
1 tbsp brown sugar
2 tbsp water
2 tbsp vinegar
1/2 tsp salt
1/2 tsp fat

Melt fat over a gentle heat.
Add other ingredients in layers (ie shred cabbage, chop onion etc)
With lid on, simmer for approx 2 hours - so very low heat.
Stir occasionally.

That's it. Great freshly cooked, even better reheated. It kind of matures.

Even better with caraway seeds and goose fat LM of which I have.....rather a lot.

In Holland (where I come from) they make a hotpotch out of nearly every cabbage. Just cook together (as in the same pot) with peeled potatoes. (Cabbage shredded or finely chopped). A little salt. When cooked mash it all up with a lump of butter and some milk, perhaps a little pepper (very nice with white cabbage in particular). Eat with gravy on top and a meat ball. Very simple cooking we dutchies have, but very good stodgy winter food

you put all the potatoes in the bottom, with the cabbage on top. I cook this recipe with red cabbage, white cabbage, curly cale, carrots (add some onions too)and greens called andijvie, which I haven't seen here.

Whole generations grew up on this stuff. The official dutch name is STAMPPOT, meaning mash pot.
