Lunch ideas that don't involve sandwiches!

I've hit a bit of a rut and could do with some nice lunch ideas for me, DS and DD. we appear to end up with sandwiches or something on toast and it's getting boring.
We have a big meal in the evening when DP gets home which is usually always a proper meal although occasionally nursery food!

Last night I cooked 8 portions of chilli beef & beans. I ate one for dinner (with pasta) and froze the rest for lunches where I will eat with microwaved sweet potatoes.

pasta and pesto, with peas, sweetcorn

chopped feta cheese, tomato, beetroot, cucumber,radishes,onion as a salad

Pearl barely red lentils with chopped salad vegetables that you like.

Pasta salad with mayonaise and sweet chilli dressing with green pappers, radish, sweet corn, mange tout or sugar snap peas and a tin of tuna

Wraps 'toasted' in George Foreman type grilling machine.

Pitta pizza's - pitta lightly toasted then topped with tomato base pesto, ham, cheese olives......topping of your choice.

Hog dogs - wholemeal finger rolls filled with halved (along length) sausages.

Pasta with soup - usually tomato based soup. Homemade tomato and lentil good but tin Heinz cream of tomato and pasta a HUGE winner

Woops, just thought rembered another. I haven't done this in a while myself. Noted for tomorrow:-

Tuna melts - halved toasted muffin topped with tuna mixed with mayo and squirt of ketchup, sprinkle of grated cheese and grilled. Annabel Karmel recipe.

Houmous and dippy things, like breadsticks, cucumber, carrots etc.

Also a pasta salad fan.

Couscous in a bowl with quartered cherry tomatoes, spring onions, red pepper, raisins, chick peas (whatever you fancy really) - make according to packet instructions but substitute hot water for veg stock and a splash of orange juice along with about a teaspoon of honey. Fluff with a fork and stir through.

Thanks for the tuna melt recipe RCOR- that'll be going in the lunch boxes next week!
