What would you serve with duck confit?

Potatoes and red cabbage (and if so what sort of spuds? Really simple new potatoes to counter the richness of the duck or potatoes roasted in the duck fat?) or puy lentils and a green salad.

I always do potatoes roasted in the duck fat and peas braised in stock with lettuce and spring onion petit pois a la francaise Grin. Not usually a pea fan but I love them like this. Your puy lentils and salad sounds good though, shame I am the only one in the house who'll eat them!

Fondant potato or roasted in duck fat. Red cabbage braised with apples in red wine.

Always potatoes cooked in duck fat (from the tin) and petit pois from France also out of a tin. Onions with the potatoes help to mix it up and if browned caramelise beautifully for a little sweetness. Don't forget black pepper. Then you have a mouthful of savoury duck, tatsty potatoes and sweet peas. (If you want to make more French, use some bacon or ham with the peas cut into tiny bits. The French don't even count this as meat - just flavouring!)
This is undoubtedly the best meal in the world from tins. Gourmet delight.

I like it with potato delphinois. Dh and I used to go to a lovely French restaurant in South Kensington that did amazing duck confit served with potato delphinois and either red cabbage or spinach depending on the season. Absolutely delicious.

Actually I might take dh there tomorrow as we have the day off together and no child to look after.

I do a lovely creamy mash and fine green beans. We love confit - one great advantage to having parents who live in France Grin
