Hi All,

Any thoughts for meal planning ideas for April? Would love to hear what you are all cooking for the coming weeks - lacking in inspiration and need to do the food shop soon!

The next weeks dinners look like this (2 adults and 13month old Dd)
Sweet chilli chicken with roasted veg and sweet potato chips
Fish pie
Pork stirfry
Pasta with homemade pesto
Vegetable lasagne
Lamb rogan josh with rice and veg
Spaghetti carbonara (meat free)

Lunches are left overs from dinner, lentil soup or cold meat salads.

We are clearing out some stuff in the freezer as I am on a bit of an economy drive - however as I don't label anything it can be a bit hit and miss! And ds is addicted to pasta and sauce (tomato/roasted pepper/basil) so a bit of that.
Then mostly
meatball curry + rice (a south african style one with tamarind that is really nice)
lamb kebabs (done as flattened meatball sized patties) with salad and pitta
chorizo hash
cheeseburgers (juicy lucy style with the cheese in the middle of the patty so it melts) with paprika and oregano chips and corn on the cob
bbq pulled pork burritos (with rice, fried peppers/onions/mushrooms, salad and cheese).
Am going to try a new chicken and chorizo dish with spicy chorizo rice and then chicken wrapped in parma ham.
The usual roast dinners on a sunday.
Pork chops (marinated in balsamic vinegar and rosemary) with salad and nice bread for a treat.

So lots of mince.

I do pulled pork in my slow cooker, 1 large pork shoulder, 1 bottle of BBQ sauce, leave on low for as long as possible. Gorgeous on rolls, served with coleslaw & corn cobs.

I do the pulled pork in the slow cooker as well. 8-12 hours on high - I use pork shoulder preferrably or pork leg if not.

I put a rub on it before I put it in the slow cooker - it varies depending on my mood but usually smoked paprika, chilli powder, cumin, oregano plus brown sugar. I mix in bbq sauce once cooked and shredded.

no. BUt I often have to pour a lot off about half way through.
