Have a huge amount of bananas due to Internet order mistake. Any ideas/recipes I could use? Can only think of smoothies or banana loaf.

Nigella does a nice chocolate and bananas muffin. You can also put them in curries but not my cup of tea.

With my leftover slightly manky bananas rather than throwing them away I chop them into 4 and put them into individual freezer bags. Then when I want a smoothie I take out a bag and pop into the blender, add 200ml milk, a spoon of peanut butter or some kamp coffee flavouring (have also used vanilla) and then a spoon of ovaltine and whizz up. The banana doubles up as ice and you would never know that they were once far too ripe to eat, they taste delicious. Even if you don't fancy the recipe it's worth a go.

Ooooh also banana custard mmmm.

Banoffi pie? Best made with over ripe fruit.

Digestive biscuit base; sliced banana on top; cover with dulce de leche (condensed milk boiled in the tin until it's thick); cover with whipped cream.

Or muffins, loaf etc

Slice banana thickly and wrap in bacon. Stick cocktail stick in and BBq!
Delish apparently - I hate bananas!

Jamie oliver hot breakfast smoothie (may be slightly altered as I can't remember original!)
One banana
One cup very hot milk
Small handful porridge oats
Spoon of Horlicks
Spoon of honey
Cinnamon

Blend all ingredients together. Really comforting, and you can alter everything to taste

Heat a knob of butter in a small frying pan until foaming then slice a banana into it and keep it all moving around gently until it all goes sticky and yummy. Surprisingly good with bacon and egg/eggy bread/etc or as a filling for pancakes or as a pudding topping for ice cream etc. If going down the sweet route a judicious slosh of a nice liqueur can make it extra yummy.

I have a great recipe for banana-ies (like brownies but with bananas rather than choc as the base ingredient). You can add choc chips and/or chopped walnuts/other nuts if you like. They are made with spelt so a bit healthy and it adds a nice nuttiness without actually having nuts in. I can dig the recipe out tomorrow if you're interested.

I used to get lunch from a little italian place which made an amazing banana pudding - they obviously cooked it up for a long time because it turned thick, gooey and black. It tasted gorgeous (they used to serve it with Greek yog on top, looked like a little Guinness) but despite the guy saying it was basically just bananas cooked down I've never been able to replicate it so if anyone here knows how to do this to bananas I'd love to know! (sorry for slight hijack op!)

Add baileys, and microwave until squidgey. Simple and yummy! If you absolutely can't spare the alcohol, try it with orange juice...

Hi zipzap - I'd be really interested in the recipe please. :)

Great suggestions ladies!

I second Nigella's chocolate and banana muffins - should be able to find a recipe if you google. So easy and real storecupboard ingredients. Can be mixed by hand really easily so good for kids to make.

Also I have made this recipe with defrosted frozen bananas and it was exactly the same even though the defrosted bananas looked pretty unpromising.

missmartha · 27/04/2012 10:06

Freeze banana chunks, quickly tip into a blender with double cream.

Whiz all together for quick ice cream.

flatpackhamster · 02/05/2012 12:04

Daiquiri. Rum, bananas, brown sugar, squeeze of lime juice, blend with ice cubes.

NettoSuperstar · 02/05/2012 13:06

Banana curry?

trinni · 02/05/2012 17:54

My favourite is Manchester Tart.

Pastry case - bake first, spread with strawberry jam, chopped banana, then creamy custard and desiccated coconut sprinkled on top.

Chill in the fridge - lovely.
