Got a freezer Misdee? When I made it, I froze more than half of it, cut into slices. It freezes really well and means you don't have to do baking every week!

Lemon Drizzle Cake

9oz sugar
9oz butter
12oz s/r flour
4 eggs
3 level tsp baking powder
6 tblsp milk
grated rind 2 lemons

Mix all together. Put in lined tray. Bake about 30-40 mins (until knife comes out clean). Prick cake with fork and pour over some warm lemon juice (see below).

Squeeze the juice from the lemons and heat (20 secs in microwave). Add icing sugar to consistency you like. Spread over cake.

Freezing a very good idea. Microwave it and it's all soft and fresh again.

Halving recipe also works. Sorry Misdee with as many kids as I have we need the full recipe lol

I take one half of the lemons and squeeze the lemon juice over the pricked cake. Then I heat the rest (about 20 secs in microwave) and mix in the icing sugar. I like the topping quite thick, others prefer less. hth

Ah Mars, see the recipe I got, that was plain yucky, had enormous amounts of icing sugar with the lemon juice at the end which made it bleh!

No need for the heart going kerplink runs of to make Mars's cake!
