Low-fat, veggie lunchbox ideas please!

I bring my lunch to work everyday. I'm currently working my way through another cream cheese and cucumber sandwich (which has got nicely soggy during the course of the morning..) and I'm BORED!

I usually have sandwiches/wraps/crackers with cream cheese or houmous and some veg on the side (cherry tomatoes, bits of pepper). Sometimes I bring a flask of homemade soup.

Can I have some inspiration please? I'm limited by the following:

  • I'm vegetarian
  • there's no fridge or microwave at work (so can't bring leftovers which would be the ideal solution, IMO).
  • I'm doing WeightWatchers badly so needs to be low fat.
  • not a total faff to prepare.

I have an insulated bag and a variety of tupperware containers.

Help!

i like couscous with things like cucumber, toms, grated carrot, beetroot in mixed with mayo. or like you i take a wrap or somwtimes a toasted pitta with a lowfat cheese slice/soft cheese & salad in.

I have just made cheese and sundried tomato muffins from a Weightwatchers recipe book which are really nice. They are worth 3 old points each, not sure how that translates into new points but are about 195 cals and 8g fat each. Perfect packed lunch food imo as they're compact, don't need heated up and can be frozen so if you bake a batch then freeze them you could take out 1 in the morning, no thought required & it will be defrosted by lunchtime!

How about fritatta or pastry-less quiche? Cous cous with all sorts of veg, seeds etc would be good too.
Or what about veggie sausage rolls? Onigiri sushi would work well too - basically samosa-shaped sushi rice with something interesting inside (a pickled plum, avocado...) then wrapped in nori.
A pot of hummus with veg sticks.
Pasta and pesto salad.
Spicy bean salad, or mashed up spicy beans made into patties - lovely in pitta bread with salad and chilli sauce.
Avocado mashed with a little blue cheese is a lovely wrap filling.
My fave veggie sandwich is emmental, avocado, rocket and English mustard.

Cous cous is an excellent idea too. And spicy bean salad - yum!

Hi, currently have the problem of moving on from easy low fat veggie soups to something not so stinky and hot and today I'm having mixed salad leaves with half a tin of mixed pulse salad from sainbury's (which already comes in a vinegarette) - tasty, low fat and full of good veggie stuff! Should work out to about 75p per day so not bad!
