I tend to cook from recipes so I can't wheel out any full-on personal recipes or ideas, but:

Leith's Vegetarian Bible is a great veggie cookbook and has quite a lot of curries and other Asian dishes. Off the top of my head, there's a curried potato and tomato dish that you serve with a fried egg on top , a Thai yellow curry with mushroom and lemongrass etc, and a root vegetable curry.

Also, Peter Gordon's books are good for more adventurous, fusion cooking. Cook at Home with Peter Gordon is lovely.

thanks, i have the peter gordon book and usually cook from mai pham's viet one, or fuschia dunlop or rasa malaysia but always on the look out for other gems. those above sound lovely

i cook a lot of north indian cuisine.spianch and potatoes,aubergine curry,keema matter,chicken made from onions tomatoes yoghurt paprika and turmeric with a bit of ginger and garlic.
