anyone got a foolproof rice pudding recipe?

I've tried two. They both say 50g pudding rice will feed 4 people but if I follow them, I end up with charred scrapings of burned milk and one-grain-thick layer of shrivelled rice. Disgusting! I kept the heat low in the oven, followed both recipes to the letter. What is going wrong?

All I want is a big bowl of that lovely creamy cinnamon-y stuff that you got in childhood. (DH says tinned is fine. But it's not. I want what my mother used to make! :) )

I use Tesco pudding rice (not the flaked stuff). The recipe is on the side of the packet and its always come out perfect for me :) I also add cinnamon and its delish!

I think about 100g of pudding rice, about 75g of sugar, generous knob of butter and 1 litre of milk makes enough for four people. I put half the milk in at the start and the rest about an hour later with the butter and cook for another couple of hours.

I've always used the proportions of 1pt milk, 2tbsp pudding rice and 2tbsp of soft brown sugar. Then cook, stirring for 1-2 hours at 130-140 fan oven, or gas 2-3.

Exactly as Zapphia said only with nutmeg instead of cinnamon.

Do you have a slow cooker? I always follow this recipe - Slow Cooked Rice Pudding

25g butter
100g sugar
100g desert rice
1ltr milk

Grease the pot with the butter (use it all up)
Add the other ingredients to the pot
Stir gently together
Turn the slow cooker to high
Stir occassionally during cooking
Cooking time is approx 2.5hrs to 3.5hrs

It's ready when its to the thickness you like your rice pudding to be
We did this in a 3.5ltr slow cooker but it is enough for 2/4 people depending on serving size.

I find it easier to check as it is on my worktop and i can just intermittently take off the lid and check whilst giving it a stir. Whenever i have made it in the oven it always turned out like yours :)

I use the tesco rice and slow cooker too and always comes out ok.
