Cake, how long will it keep?

DS' birthday on Friday and I want to make a cake for him, my first try at doing this so I was thinking I could bake the cake tonight and then decorate it tomorrow, then if it's rubbish I can buy one on Thursday Grin

If I do this will it be ok on Friday? I have a tin to keep it in once it's cooked.

If its a plain sponge cake it should be fine in airtight container. If decorating with butter cream I would keep in fridge. I made a Victoria sponge on Friday, still fine and moist today.

It depends on what kind of cake. A victoria sponge or similar would probably go dry in that time, but something like this, particularly with the syrup to keep it moist, would be fine.

Crossposts, and contradicting posts :) The vanilla cake is good though, nice and firm for decorating.

A Madeira is the classic for birthday cakes: keeps well and has a firm texture, so it cuts nicely.

Grin I was planning a chocolate cake with butter icing in the middle and choc/smarties on the outside

I would do it all on Thurs but am paranoid it'll be crap and i'll need to buy one

Sounds like you'll be fine either way :) How old is your DS going to be? I think he'll love his chocolate cake. It's cake after all Grin

he's going to be 5. He's asked for a smurf cake but i'm not up to that Grin so I ordered a cake topper from ebay with a pic of smurfs on to stick on my cake.
