I have been given a Heman cake and would love some recipes that don't involve apple. Can anyone help?

This is from a book by Philippa Vanstone called Homemade Cakes. I can't vouch for it as I have never had a Herman!

1 and 1/2 cup/300g sugar
2 cup/300g plain flour
1/2 tsp salt
2 tsp cinnamon
1/2 tsp baking soda
2 tsp baking powder
2/3 cup/160ml veg oil
2 eggs
1 cup/100g pecan nuts, chopped
3/4 cup /150g raisins
4 tbsp margarine
2 tbsp milk
1 cup/100g confectioners sugar

preheat oven to 180C
mix 2 cups of starter, 1 cup sugar and the flour except for 3 tbsp
add salt, half the cinnamon, baking soda and powder, oil and eggs
stir
stir in pecans and raisins and put in cake tin.

rub together 1/2 cup sugar, 3 tbsp flour, half the margarine, and remining cinnamon until it clumps. sprinkle over dough.

bake for 20-25 mins

heat milk and margarine, add confectioners sugar and pour over cake while still warm.

TheOneWithTheHair, I once ended up with a load of Herman cake mix. I had to make it all into cakes (ended up with six!) and did not want to make them all the same. So I basically swapped apple for different fillings. They were: chocolate (just cocoa powder), chopped hazelnuts, lemon zest and ginger (lots of each, this was the best by far), almonds and amaretto, dried fruit mix. Basically, stick in anything you like and it is likely to work. I think something like halved plums would do well. I also like to make a lemon icing topping - icing sugar mixed with lemon juice and lemon zest.

i only feed herman a third of a cup of everything on day four and same again on day nine, which means you then have two hermans instead of six, so one to make a cake and one to carry on!

Hermans do freeze very well! It's rather satisfying to pull one out of the freezer after DC is in bed. Grin
