How do i make pancakes???

I used to make them all the time with my mum when i was small but have no idea how to make them now.

It's the little fat ones not the big thin ones, sure they have a proper name but that is obviously in the same place in my brain as the recipe.

4 oz plain flour
pinch salt
1 egg
1/2 pint milk

Bung milk, egg and pinch salt in a bowl and whizz round with a blender thing. Gradually add flour still blending. Leave to 'breathe' for a while (hour or so).

Get non stick frying pan. Heat up little bit of oil. When oil really hot (don't need much oil at all), pour in batter mixture to cover pan (more mixture - thicker the pancake). Cook on a med/low heat, flip over when underside is cooked to cook other side.

Thats how I do them!!

I've got a good recipe for fluffy big pancakes - a bit like scotch pancakes (the little fat ones) but bigger:

separate 3 eggs

in one bowl, beat together teh egg yolks, 4 oz plain flour, 5 fl oz milk and 1 good tsp baking powder - and a pinch of salt or a little sugar.

in another bowl whisk the egg whites to the stiff peak stage

fold egg whites in with the other stuff

fry in a non-stick frying pan - one large table spoon per pancake

I've kind of promised my kids to make these tonight with chocolate sauce as dh is away..

Went to make them this afternoon and found out someone has eaten all the eggs. So will maybe make them tomorrow.
Someone had started a thread about pancake day and it made me hungry.

Or you can order Aunt Jemima pancake mix from Ocado/Waitrose. It makes the fluffy American-style and is a staple in most American households.

I do little fat ones every Sunday

225g plain flour
tablespoon baking powder
2 eggs
300 ml milk
pinch salt
teaspoon sugar

whizz in blender then add 30g melted cooled butter

whizz then leave to sit for half an hour

I make them in a small pan, when the top bubbles they are ready to turn. The girls love them.
