Quick easy dessert for 8 people ideas?

PinkPolkaDots · 08/04/2012 15:24

I am doing a roast lamb dinner tomorrow for me and DH, plus my 3 siblings and their partners, so 8 adults in total (everyone in their 20s, no kids and no one particularly fussy eaters)
Totally forgot about dessert so any ideas of something I could knock up this evening or tomorrow day time (we are eating approx 5pm tomorrow.)
Only catch is that I will have to buy the ingredients at local tesco garage which is like a typical spar sort of sized shop so a bit limited as to what ingredients they will have there!
As cheap as possible too please!
Thanks in advance for any ideas!

Oooh or Bournvilled Ice Cream

Make 1 Pint of custard with full cream milk, mix in tub of cream and big melted bourniville bar, chuck in freezer.

When it's just starting to freeze mix it up again (I think this has something to do with texture... anyone?).

Take out of freezer a bit before you want to use it as it sets like cement.

Just saw a recipe on 30 minute meals - black forest affogato, looked v easy.

Basically crushed shortbread, tinned cherries and a scoop of vanilla ice cream with espresso poured over it and some grated chocolate.

www.jamieoliver.com/recipes/chicken-recipes/mustard-chicken-quick-dauphinoise-greens

Ingredients:
1 tablespoon instant coffee (or you
could use 4?6 shots of espresso)
3 teaspoons golden caster sugar
4?6 round shortbread biscuits
1 x 425g tin of pitted black cherries
in juice
1 x 100g bar of good-quality dark
chocolate (70% cocoa solids)
1 x 500g tub of good-quality vanilla
ice cream

Serve:
AFFOGATO Put 1 tablespoon of instant coffee into a small jug with 3 teaspoons of sugar. Half-fill the kettle and boil. Crumble the shortbread biscuits into the bottom of 4 espresso cups. Drain the cherries and divide them between the cups. Bash the bar of chocolate up and add a few chunks (or grate it)
to each cup.Take the cups to the table.

Scoop of ice cream on each one, then pour on just enough espresso to start melting the ice cream

Some great ideas here, thanks everyone!
Have to say I'm quite liking the idea of bowl of ice cream then just crumble over something or pour some sort of sauce, so everyone sorts themselves out! Grin

Lurking on another thread prompted me to make this for a post-roast pud today:
www.deliaonline.com/recipes/type-of-dish/sweet/chocolate-bread-and-butter-pudding.html
Went down v well indeed. I reckon most Tesco garages would sell the ingredients, ours had no mini bottles of rum so I went to the local and got them to serve a double shot into the glass I'd take with me. Sorted.

We had Eton mess today, very easy and sooo yummy.

Double cream - whipped
2 pots of rhubarb yogurt
Strawberries - crushed with the back of a fork
Meringue - broken up.

All mixed together and then chilled before serving.

JambalayaCodfishPie · 08/04/2012 20:35

Angel Delight. Grin

Half the milk so it's thick and mousse-y. Top with fruit/sauce.

I did this once. Honest. Grin

moosemama · 08/04/2012 20:52

I second Eton Mess. It always goes down really well and is ridiculously quick and easy to make.

MrsKitty · 08/04/2012 20:57

Update on the lemon pudding I posted upthread. It was bloody lovely! Grin

All lemon curd-y on the bottom, and light and fluffy sponge on top. Really easy to make too - will be doing it again.

THis looks so impressive and is yet so simple. Can use fruit juice instead of alcohol.
